There have been a few casualties along the way, but on the whole the trees are thriving, and last year we even had a handful of fruit. But maybe only enough for a couple of bottles of cider...<br />
<br />
It takes time. In fact it was two years before the orchard was planted that Mike ordered the trees and their life began in the nursery - so they're five years old now.<br />
<br />
And here they are - growing well (along with the grass and weeds around them, but ignore that!) - and with lots of blossom it's possible there we will be enough fruit to harvest this autumn...<br />

Mike has long been thinking of creating a sparkling draught cider to complement the existing range of bottled ciders. Although it may seem like a small and natural leap - from bottle to keg, from drinks aisle to pub - it's actually an entirely different market with a whole heap of challenges.<br />

This is not entirely unknown territory for Mike - last year saw the launch of <a href="http://henneyscider.blogspot.co.uk/2014/04/henneys-traditional-draught-cider.html">Henney's Traditional</a>, the bag in box cider distributed throughout the Midlands by Purity Brewing Company, but this time he wanted to create something with wider appeal - a bright sparkling keg cider.<br />

One of the first considerations is strength. Henney's bottled ciders are typically around 6% abv - and there aren't many pub landlords happy to be dishing out pints at such a strength. So the first thing Mike had to do was blend a slightly lighter cider more suited to pub drinking.<br />

Next there's the tricky issue of distribution. Obviously he has all the logistics in place for producing bottled cider, but the delivery of keg cider into pubs requires an entirely different set of suppliers and equipment. Cider has to be moved - from farm to a bottler geared up to fill kegs, then on to pubs. Branded bar fonts are required, plus supportive material - beer mats and bar runners. And you wouldn't believe how many spare kegs are needed to ensure the cider keeps flowing - some are being filled, some are in pubs, some are empty and on their way back to the bottlers... For every keg sitting in a pub cellar there are two or three more floating around. And stainless steel kegs are not cheap.<br />

Given the challenge of sales and delivery into pubs, a trusted distributor with a good customer base and logistics already in place is what is really needed. And as luck would have it, there is just such a company nearby.... Enter into the story <a href="http://www.wyevalleybrewery.co.uk/" target="_blank">Wye Valley Brewery</a>, Herefordshire's leading cask-ale brewer based just two miles away from Henney's - and following a series of meetings 'just up the road' Mike is delighted to have set up an exclusive arrangement with them to supply his new cider.<br />

And finally there is the matter of a product name, but funnily enough this was already in place. A couple of years ago now Mike noticed that 'Autumn Gold' the old Taunton Cider product, was no longer registered - so he acquired the name. So Henney's Autumn Gold has been registered for some time now - and was just waiting for the right cider to be created...<br />

½ x 500 ml bottle Henney's Dry Cider<br />
4 tbsp honey<br />
4 cloves garlic, halvedfew
sprigs rosemary<br />
420g essential Waitrose British Pork Fillet, cubed<br />
2 easting apples, chunked<br />
8 shallots, halved<br />
1 red pepper, seeded and thickly sliced<br />

1.
Place the cider in a large glass bowl and stir in 2 tbsp of the honey, the garlic cloves and half the rosemary. Add the pork and
leave to soak for an hour or two. Overnight will not hurt.<br />
<br />
2. Lift out the pork, discarding the marinade. Thread the meat and
vegetables alternately onto skewers, and drizzle with olive oil.<br />
<br />
3. BBQ or grill 15–20 minutes, turning regularly until cooked through <br />
<br />
4. Chop the remaining rosemary and stir into the
remaining honey. Brush onto the skewers and continue to cook for a
further 5 minutes until shiny and nicely browned.<br />
<br />
Serve with rice, salad and a glass of Henney's.<br />

A prominent event in the cider making world, this year's competition saw 224 entries from 51 cider makers. Entries came in from around the world for the competition held at The Cider Museum Hereford last week, with judging by Nick Bradstock, David Sheppy, Patrick Shave and Julian Temperley<br />

Mike's entry won first prize in the coveted 'Class 1 - Dry Cider' class, and then went on to beat the winners of the other 10 cider and perry classes, to take the highest accolade of the competition, 'Overall Champion'.<br />

We downsized on the pork somewhat (there's only two of us at home so a
5kg joint seemed a bit greedy) and roasted our more moderately sized
joint for about six hours. We also swapped the Henney's Dry in the
recipe for a bottle of Henney's Vintage (not sure what Mike's thinking
was there - fuller flavour? Or maybe he just happened to have Vintage to
hand) but otherwise we followed the recipe to a T and it was simple,
tasty and worked a treat. <br />

The pressing season is now well underway, but still plenty to go - the different varieties of cider apples mature at different times throughout the season, and Mike will pressing right up to December. Mike donned his overalls in early October, headed off to the farm up the road where his cider is pressed and stored, and I haven't seen much of him since...<br />

Occasionally he comes home for a bacon sandwich, does a bit of admin and picks up messages from local apple growers ("Do you want 30 tonnes of fruit this afternoon?") but really it's all about the practical stuff at this time of year. <br />

He frowned when I suggested I trail around after him with a camera (can't imagine why?) but he did agree to take some photos himself, and here are the first few - starting where the process begins, with the apples. These are taken in the orchards next to the farm, and show apples which will be made into this season's Henney's cider. <br />

These photographs were taken last week, when the sun was shining. It's
been raining here for about 48 hours which makes harvesting apples
tricky - so fruit deliveries have temporarily slowed up and there is a bit of a lull in pressing... time for an extra bacon sandwich!<br />

It changes every time obviously, but we've spotted everything from olive trees to office equipment, hosepipes to beer barrels, tractors to vintage caravans.<br />

And last time we went we came across some old cider making equipment - a trough, millstone and an old screw press.<br />

We didn't catch the auction for the press, but watched with interest when stone came up. The bidding went up to £1800 - but failed to meet its reserve (which must have been a blow for the seller, faced with getting it home again!)<br />

A week away
in Brittany last month was something of a bus man's holiday for Mike -
not that he was complaining. It is an area of France famous for its
cider making tradition, and obviously there was much sampling to be done.</div>

is typically served as a wine alternative, in classic 750ml bottles to
share out around the table. And whilst we didn't actually see anyone
using them, the gift shops were full of little crockery cider mugs - a
traditional, rustic alternative to a glass.</div>

It
was great to so much cider around - and so much of it of excellent
quality, locally produced by small scale cider makers. There was always a
fine selection of ciders in the restaurant wine menus, and, perhaps
most heartening of all, even the big supermarket we visited had a cider

They sent it over last winter but I failed to get organised and post it, then the weather warmed up and it didn't really seem appropriate for a summer evening.<br />

Apparently Heston's 'development team' worked up a recipe using bottles of Vintage bought from Waitrose, then the head chef, Nick Galer, contacted Mike to buy in quantity. He now sends it over every so often by the pallet load, so evidently people eat a lot of mussles in cider at The Crown in Bray.<br />

I did try to persuade Mike that we really need a trip over to eat said mussels - as research for this blog post you understand - but apparently this isn't necessary. Ah well.<br />

Planning the orchard actually began a couple of years ago when Mike first acquired the land. We decided then to commit about four acres to cider apple trees and to go for a traditional standard orchard over a commercial bush orchard.<br />
<br />
Obviously a bush orchard - smaller trees, closer together, intensively managed - would be the more economic choice, but there were other factors in our decision. We wanted to create something that would enhance the landscape and help preserve a tradition in Herefordshire. Standard orchards - bigger trees, more space around them, less need for pest control - are a huge part of Herefordshire's heritage and their survival depends on active planting and management.<br />
<br />
Plus traditional orchards are visually beautiful and a haven for wildlife, and given we are planting the orchard right on our doorstep, we wanted to create something we could enjoy.<br />
<br />
So, having decided on the type of orchard, the next job was to choose the trees. Cider apples fall into four broad taste classes - sweet, bitter sweet, sharp and bitter sharp - which reflect the sugar, acid and tanin levels in the fruit - and the trick in creating a great cider is to balance these properly. So this was the main factor behind the apple tree varieties we chose. Other factors were disease resistance, the 'juicability' of the fruit, and - crucially for us - the season of fruit maturity. We hope to be harvesting across the season (which runs from late September to December) rather than all at once so we were looking for a mix of early, mid and late croppers.<br />
<br />
We settled on 10 different varieties and ordered 120 trees from <i><a href="http://www.johnworle.co.uk/">John Worle Ltd</a></i>, a cider apple and perry pear grower in Herefordshire:<br />

As I said, this was all a couple of years ago, and with the trees now two years old and in a dormant phase they were ready to be lifted from the nursery and planted here at Tree Farm.<br />

At eight foot tall they are already sizable trees, and given the scale - 120 trees across four acres - Mike decided to use John Worle and his team to do the planting, which took about three days in total - a day for marking out and drilling holes for the stakes, a day for putting the stakes in, and a day for the actual planting. <br />
<br />
There's loads of great information on <i><a href="http://www.johnworle.co.uk/">John Worle's website</a></i> about how to do all this, including guides to planting plans and a great little film about the actual planting technique. Even on an eight foot tree, the roots are surprisingly shallow and don't need to be planted deeply - but there are certain crucial techniques.<br />
<br />
And that's it! Two years on and we now have an infant orchard planted at Tree Farm. It's been hard to take decent photos given the gloomy weather (and all the wet days have of course delayed the planting itself - it has to be dry when this is done) but I have tried to track the progress as best I can, and over the next few weeks and months - and years - I am sure there will be lots more beautiful photos to come.<br />

Time for the monthly round up and a look at what has been happening at Henney's during February.<br />

Despite the prediction of racking and blending this month (some proper cider making stuff) I still don't have much to report on that front. March now, apparently.<br />
<br />
But bottling has stepped up a gear this month. With Spring just around the corner and Easter at the end of the month sales are expected to pick up so Mike has increased his bottled stock-holding, ready to fulfill orders. <br />
<br />
Quite a few more sales meeting this month so Mike was away a fair amount - overalls off, suit on, bottles clanking in his briefcase. And while he was busy drumming up trade, I tried out a couple of new cider recipes: a <a href="http://henneyscider.blogspot.co.uk/2013/02/a-hearty-chicken-casserole-with-henneys.html"><i>chicken casserole</i></a> cooked in cider, and quirky version of <i><a href="http://henneyscider.blogspot.co.uk/2013/02/cider-pancakes-with-caramel-apples.html">pancakes</a></i> for Shrove Tuesday - made with cider instead of milk, and served with caramelised apples. Highly recommended.<br />

But the big news this month is here at <a href="http://henneyscider.blogspot.co.uk/2013/02/tree-farm-henneys-hq-and-our-home.html"><i>Tree Farm</i></a>, where work has begun on establishing the new cider apple orchard. I will cover this in depth in another post, but in summary, 120 traditional cider apple trees have now been planted, thus transforming our empty fields into an infant orchard. Exciting times...<br />

It means that Henney's Cider has Protected Geographical Indication (PGI) status. This is a very good thing, but I wonder how many people actually know what it means? So I thought I would write a post about PGI - and what it means for Henney's - and for Herefordshire cider in general.<br />
<br />
Under EU legislation, there are certain geographical food and drink descriptions that can <i>only</i> be used by accredited manufacturers. Such descriptions are called Protected Geographical Indications and the term "Herefordshire cider" is one of them. Basically it means that cider can only be labelled "Herefordshire" if it is produced in Herefordshire using local cider apples and certain traditional techniques. It is an assurance of provenance and authentic cider making and you can read the exact requirements <i><a href="https://beta.herefordshire.gov.uk/media/1472698/env_trader_info_leaflet_for_cider_and_perry.pdf" target="_blank">here</a>.</i><br />

It seems rather obvious doesn't it, that Herefordshire Cider should have to be made in Herefordshire? But so many terms and descriptions are meaningless these days - for example 'farmhouse cider' or 'country cider' are not protected in anyway, as such anyone can use them, even to describe the mass produced 'ciders' that are really imported concentrated apple juice supplemented with cheap forms of sugar. So it's comforting to know that anything terming itself Herefordshire Cider really is the genuine thing.<br />
<br />
Henney's was accredited PGI status several years ago, when Mike first applied for it. He has to be able to show when and where he buys his fruit, where it is milled and pressed, and how his cider is fermented, matured and stored prior to sale. As a genuine Herefordshire craft cider, Henney's sails through the process - after all, it's never a chore for a true cider maker to talk at length about his product and how it is made! <br />

So, for anyone wondering, that's what the little symbol on the back of every bottle of Henney's is all about.<br />

We are still in Bishops Frome, the village where Henney's Cider has been based since day one, but we are now living at Tree Farm, a smallholding on the outskirts of the village.<br />

At the moment there is precious little farming going on at Tree Farm - a bit of haymaking, a few tenant sheep over the winter, one bee hive and three pet goats - but the plan is to establish a traditional standard cider apple orchard over about four acres. <br />
<br />
We committed to buy the farm <i>ages</i> ago - have had a lot of work done on the house before moving in - so Mike was able to start planning the orchard and ordering trees back in 2011. He chose 10 different varieties of standard apple trees, which have been growing in the nursery at <i><a href="http://www.johnworle.co.uk/index.html">John Worle Ltd</a> </i>for the past 18 months.<br />
<br />
Now in their dormant winter state, it is safe for them to be uprooted and moved, so in just a few weeks time a vast number of trees will be arriving ready for planting. <br />
<br />
It's going to be an exciting time - to finally see Tree Farm start to live up to its name - and I'll make sure to capture the journey step by step on this blog. <br />

Our first recipe, a hearty chicken casserole, is one we've adapted as it originally called for dry white wine, but I contacted Lucy Cash, the recipe writer, beforehand to ask if she thought it would work and she said yes, give it a go. So we used Henney's Dry Cider - and it was very nice.<br />

Add the mushrooms, potatoes, peas, carrots and mushroom ketchup, give everything a good stir and season with a decent dosing of salt and pepper. Add rosemary and bay leaves and cook for a few minutes</span></span><br />

But there has been <i>some</i> activity this month. Whilst very little is happening in terms of the actual cider making, January is the perfect time to work on building sales and distribution. And certainly I have heard plenty of phone activity coming from his office this month.<br />

Henney's is stocked in most of the major supermarkets in the UK - no mean feat when you consider there are no account managers or sales teams - just Mike.<br />

Since the very beginning Mike has had a couple of key objectives - firstly (and obviously) to make a really good craft cider, but secondly to make a really good craft cider that is <i>as widely available as possible.</i> And of course, if you want to make something widely available, supermarkets are going to play a key role.<br />
<br />
From the word go Mike has had a really positive attitude to supermarkets. It probably helps that his background is in account management for other, major drinks brands so he is used to dealing with big retailers, not suspicious of them.<br />
<br />
But there is a lot of work to do in maintaining and developing supermarket listings. This month has involved endless phone calls, messages and emails trying to get appointments with the appropriate buyers - cider commonly falls into the same grocery category as beers, and the category buyers are very, very busy. <br />
<br />
If it's already a strong account for Henney's, Mike is still keen to meet with the buyer, review sales and introduce new products (have you read our post on <i><a href="http://henneyscider.blogspot.co.uk/2013/01/introducing-henneys-exhibition-cider.html">Henney's Exhibition</a></i>?).<br />
<br />
And if it's a new retailer then he is simply trying to make a contact, maybe get an appointment to present <a href="http://henneyscider.blogspot.co.uk/2013/01/the-henneys-range-of-ciders.html"><i>the range</i></a>. Plus buyers change roles all the time so there are often new people to meet. <br />
<br />
And if all goes well and an appointment is made, then that's a full day out of the office and lots of traveling - curiously enough there are very few supermarket HQs based in Herefordshire. It always makes me smile when Mike says he will be out all day because he is "going to Tesco's" - as if he off to do a giant shop.<br />
<br />
And then there's all the promotional proposals to work out - most retailers work a long way in advance and are, naturally, keen for suppliers to put together discounts and promotional offers that they can pass on to their customers. <br />
<br />
So that's what January has been all about. Phone calls, emails, meetings, proposals.<br />
<br />
Oh, and a spot of playing in the snow.<br />

Up until today anyone searching for Henney's Cider
in the world of social media would not have had much luck.<br />
<br />
For Mike Henney, the man behind the brand, is not a very social creature. And social media is not really his sort of thing.<br />
<br />
But,
with a bit of grumbling, he has finally accepted that it couldn't hurt to have more of an online presence, and he has agreed to let me share some
